Favorites: home-made salsa

Every Friday I will post about something that is a ‘favorite’… food, movies, music, something that just makes life work better. We begin with something that is dear to my heart… the perfect, easy salsa recipe.

I love salsa. I mean, I looooove salsa. I choose restaurants based on salsa. I only can handle ‘mild’, but I love it. I’ve tried to make my own; I get caught up in what kind of peppers and what kind of tomatoes and how much of which. Mostly I end up buying something from this arsenal of amazing, fresh salsas.  Their only flaw is that they disappear and they are, all things considered, a bit pricey. But then a friend gave me her recipe.  And ohhh my. Easy. Delicious. Perfect. No expertise in produce required.

1 can diced tomatoes (drained)
1 can original Rotel (drained)
1 can tomato sauce
1/2 c chopped onion
1/3 c chopped cilantro
1 clove minced garlic
1 T lime juice

Mix in a food processor to your desired texture. To be honest, the first time I made it, I overlooked the tomato sauce, and it was totally delicious, although a little on the spicy side for me. The tomato sauce brings the heat down a little. So try it and tweak to your liking!

Just because I love to share the laughs with all of you….

(painting at the table with a friend) son:  my first favorite word is ‘oh my chicken bootie’.  My second favorite word is ‘oh crud’.

(random comments in the car) son: mom, can I be one year old when I’m in heaven? Do we get to pick? (pause) I’ll see you there, right?  Can you be 40 when you’re in heaven? because I like you at this age.

daughter (11): WOW. When I get in this car, I feel so low to the ground.
son (6): yeah. Welcome to my world.

(getting ready for a shower) son: Dad. Poop is totally a word. Know why? Because it has two ‘o’s in it. And ‘o’s are vowels.

(bedtime) me: ok buddy, do you have anything you’d like us to pray about tonight? (pause) son: chicken.

Best Friends.

Our boy has a best friend. When they’re together, all manner of boy things happen. Last night, this was the scene in our living room.

Favorites: the best cookies ever.

“Hey, can you make the cookies made of crack?”, my husband asks me. (He’s referring to the addictive qualities of a specific Oatmeal Chocolate Chip cookie.  There are no narcotics involved. Really.)

So I made the cookies made of crack, and I thought it’s about time I share this ridiculous goodness with the world. So here you go.  The best cookies in the world.  (Originally my mom’s recipe)

1 cup shortening
3/4 cup brown suger
3/4 cup granulated sugar
2 eggs
1 tsp vanilla
1-1/2 cups flour
1 tsp baking soda
1 tsp salt
2 cups oatmeal
7 oz semi-sweet chocolate chips (or more… whatever amount of chocolate you want)

mix well shortening, sugar, eggs & vanilla. add remaining ingredients, mix well to blend. Bake at 350 on greased cookie sheets, about 8 minutes (best removed from oven when not completely browned… will cool to a more chewy consistency!)

Make them.  Today.  But please use their powers for good, not evil. YUM.
